Coconut Curry Chicken

Paired with coconut rice & crepe like pancakes. Substitute chicken with chickpeas for a vegetarian option, use less coconut and more water for a healthier option.

Cooking instructions

* Step 1

Clean & cut chicken into large chunks. Season with yogurt and dry ingredients, let it marinate in the fridge for 30 minutes

* Step 2

Heat oil in a pot and gradually add & sauté onions, garlic, & ginger for about 10 minutes, until onions are soft. Garlic burns fast so add it last

* Step 3

Add tomato paste, Serrano pepper, and dry ingredients, cook for 5 minutes. Add water if needed

* Step 4

Add chicken mixture. I sautéed my chicken on a cooking pan for about 15 minutes before adding, but you can also add it in raw and cook down the chicken broth.

* Step 5

Cook chicken until it’s done, add 1/2 cup water and cover & simmer for 5 minutes. Add coconut milk and simmer for an additional 10 minutes.

* Step 6

Garnish with parsley and/or cilantro & enjoy 😉
