Salted Chocolate Covered Soft Chewy Caramels
This recipe came about after I overlooked a batch of caramel sauce and it thickened to much to be a dessert sauce. However it had become a chewy soft caramel perfect for a chocolate covered chewy candy!
Cooking instructions
* Step 1
Combine butter, sugar and cream in a saucepan and cook, stirring on medium low heat until melted, simmer 10 minutes, add vanilla and salt, cool and pour into container to cool compeatly
* Step 2
Take cold caramel and roll into tablespoonfull balls or disks. Caramel should be very cold at all times to work with
* Step 3
Melt chocolate in the microwave until smooth
* Step 4
Dip each caramel ball in chocolate
* Step 5
Place on parchment, sprinkle each with a few grains of sea salt while chocolate is wet. Refrigerate to set chocolate. Sore in the refrigerator.
