Grandpa's Seafood Gumbo

Cooking instructions
* Step 1
In an extra large stock pot, make a roux by stirring flour and oil over medium-high heat until browned peanut butter color. Note: stir often and do not burn.
* Step 2
When roux is made, add onions, bell peppers, celery, and garlic. Cook, stirring, until veggies are limp, being careful not to burn.
* Step 3
Add hand squeezed tomatoes and juice, tomato sauce, salt, black pepper, and cayenne pepper. Cook until well blended.
* Step 4
Add water slowly, stirring to mix with roux. Cook for 50 min.
* Step 5
Just before serving, bring to a light bubbling simmer, add shrimp and mussels, cook 10 mins.
* Step 6
Add parsley, green onion, oysters, and crab meat, cook 5 mins. Don't overcook seafood. Serve immediately.
