Ohh I love these fried eggplant with any other vegetable dish as a side d side dish.It's also known as baigan in Pakistan available in different color and size like white,green and purple i used purple.

Sprinkle all spices on eggplant and mix well stay for 5 to 10 minutes. Then fry on pan at low heat flip sides and fry till it get crispy golden.
