Winter Melon & Chicken Simmer, to Enjoy the Taste of Chicken
I received a very large winter melon. I was able to make this simmered dish with a light but defined taste. This is from my personal notes.
Cooking instructions
* Step 1
Cut the winter melon into bite-sized pieces and drain in hot water. (This will help remove any astringency from them).
* Step 2
Cut the chicken into small bite-sized pieces, sprinkle salt and sake (not listed), and rub into the meat.
* Step 3
Put the chicken in a pot and heat. Once they've browned, put the winter melon.
* Step 4
Add water, sake, and mirin and boil. Once it's come to a boil, add salt and dashi soy sauce.
* Step 5
Continue boiling and once the winter melon has reached your desired hardness, it's complete.
