Easy Eggplant Namul
I tend to receive a lot of eggplants when they're in season! I really like eggplants so I enjoy using it in a lot of dishes and cooking it in many ways. My family really loves the refreshing taste of this namul dish so I end up making it a lot.
Cooking instructions
* Step 1
Cut the eggplant into 5 mm thick diagonal slices. Follow the Steps 1-4 fromto prepare the eggplant, and drain it well.
* Step 2
Heat up some sesame oil in a frying pan and stir-fry the eggplant.
* Step 3
Once the eggplant is cooked, transfer it to a heat-resistant bowl and mix it with the garlic, chili powder, umami seasoning, salt, and pepper.
* Step 4
Sprinkle some roasted sesame seeds on top and it's ready.
* Step 5
[Addendum] You can use sliced red chili peppers instead of chili powder if you'd prefer. In that case, stir-fry the red chili peppers with the eggplant.
