Vickys Mixed Bean & Wild Rice Salad
A no-effort side, suitable for potlucks, bbqs etc. Use any dressing you like, goes with anything!

Cooking instructions
* Step 1
Cook the rice according to the packet instructions, then drain and rinse cold - I used Lundberg Wild Blend brand rice - it contains a mixture of long grain brown rice, sweet brown rice, wild rice, whole grain red rice and black rice
* Step 2
Put in a bowl with the mixed beans, sweetcorn, onion and bell peppers
* Step 3
Mix the dressing ingredients together
* Step 4
Toss with the other ingredients and add salt or other seasonings to taste
* Step 5
This is a great side for picnics, potlucks, pizza, chicken, fish, goes with pretty much anything. You don't need to dress with the dressing I listed, you can use mayo or any other salad dressing you love
* Step 6
This amount will serve 10 - 12 people
