Vickys Tuna-Stuffed Picnic Tomatoes, GF DF EF SF NF
We take these on picnics as a change to the usual sandwiches. If you use salad tomatoes you don't even need cutlery, just eat them like an apple. Gorgeous!

Cooking instructions
* Step 1
Wash the tomatoes and cut off the tops to use as lids. Scoop out the core and seeds carefully with a spoon
* Step 2
Salt the insides then place upsides down over kitchen paper to drain
* Step 3
Drain the tuna and flake it with a fork into a bowl. Finely chop the onion and add to the tuna with the parsley, sweetcorn, ketchup and mayo. Season to taste
* Step 4
Spoon the tuna filling into the tomatoes, put the lids on and serve on a few lettuce leaves
* Step 5
You can use baby bell peppers or hollowed out cucumber instead of tomatoes
