Hawaiian Crab "Ceviche"

Hawaiian Crab "Ceviche"

Measurements are rough, so may need some revisions.

Cooking instructions

* Step 1

Slice red pepper into thin strips.

* Step 2

Preheat a frying pan or skillet on medium heat, then roast pepper slices on pan until lightly charred (you should have no need for oil or cooking spray). Set aside and allow to cool, around 5-7 minutes.

* Step 3

While waiting for the peppers to cool, combine apple cider vinegar, stevia, pineapple juice, mayonnaise, paprika, garlic powder, salt, and pepper in a mixing bowl, stirring together until a thin dressing is made.

* Step 4

Finely dice the bell pepper, then in a serving bowl, combine imitation crab, lobster, crushed pineapple, minced olives, green onions, bell pepper, and dressing.

* Step 5

Allow to cool in the fridge, about 45 minutes to an hour, or serve immediately.

* Step 6

Enjoy.
