Cooking instructions

Chop the Veg

Add all the veg to 3 litres boiling water with 2 Star Anise boil then add the veg stock cubes sprinkled in

Add butter to the pan heat up add the onions fry for 1 minute. Then add the Crushed garlic stir to mix

Next add the dried Basil, Cumin, black ground pepper mix in fry for a further minute

Next add the Worestershire sauce mix then add to the soup pan with the veg and Stir in bring to the boil then down to simmer for 40 minutes.

Stir and the veg it will have softened, you will also need a further 3/4 pints boiling water to add. If you want it smooth and thick add to a blender, but will not all fit in so do 2 halves. Also remove the star Anise it will have all the flavour in the soup.

After blending add back to the heat and bring to the boil. Then add to the bowls and Garnish with some shredded Beetroot and Serve.
