Vegan Chili

I'm not vegan by any means. But this turned out good enough that it's my new go-to chili recipe for sure.

Ingredient

olive oil

Cooking instructions

* Step 1

Dice onion, and slice bell pepper.

* Step 2

Warm olive oil in a medium-large soup pot. Add onion and bell pepper and sweat until translucent.

* Step 3

Remove chorizo from casing, and crumble it into the pot.

* Step 4

Slice up the mushrooms and add them to the pot.

* Step 5

Dump in your tomatoes. Make sure to break them up with a spatula or a wooden spoon if they're not already crushed.

* Step 6

Rinse the kidney beans and stir them into the pot.
