Khichuri

It’s Ramadan season and whenever I get the chance, I snoop around the kitchen every near Iftar to hopefully get a glimpse and learn something from Sadia’s Bangladeshi cuisine. To date I’ve developed a huge interest in Khichuri, which should typically be rice cooked in a handful (by handful I mean a loooooot - as long as they communicate) of spices.

Ingredient

Food ration :

4 - 5 people

Cooking time :

1 hr 30 minutes

1 1/2 tsp

turmeric

1 1/2 tsp

cumin

Cooking instructions

* Step 1

Rinse rice thoroughly until the water runs clean. This should take between 3 to 4 rinses. Leave rice to drain through a strainer to air-dry

* Step 2

Meanwhile, heat a tablespoon of oil on medium heat. Add almonds to the oil and fry, stirring continuously until browned and evenly cooked but not burnt, just enough to give off a nutty aroma. Take off heat and set aside for later

Set water to boil in a kettle

* Step 4

In a shallow saucepan or pot, heat oil on medium-high. Add cardamom and bay leaves first and stir fry to temper the oil, followed by all remaining spices. Cook stirring for about 5 minutes, adjusting the heat as needed and paying attention to the fragrance

Add the rice to the roasting spices and stir fry for 4 to 5 minutes, until it starts to look translucent (careful not to burn it). Finally add the boiled water, mix until incorporated. Cook for 3 minutes (or until it stops bubbling but is still wet) on medium heat, continue to cook the rice on low heat until it dries. Stir at least 3 times in between to prevent sticking

* Step 6

After about 15 minutes of letting the rice cook with steam, stir in the almonds and let steam for another 3 to 4 minutes

Your Khichuri is ready but favors will develop more if you let it rest for about 5 minutes off the heat before serving. I enjoyed my Khichuri with a creamy chicken, cauliflower and potato side [recipe for another day]
