FDA approved method to cook kidney beans

I was trying to find out a solution where the toxins in rajma a.k.a. red kidney beans could be destroyed without having to soak it for a long period so as to prepare a dish for unplanned visitors. This is when my research led upto this post from information gathered throughout the internet and FDA recommendations regarding the same. Please note that there is a high chance of toxicity in red kidney beans. It needs to be killed to become edible.

Cooking instructions

* Step 1

Take a cup of rajma and add it to the instant pot after washing it a couple of times and draining the water from the beans.

* Step 2

Measure 5 cups of water. Add it to the instant pot. Close and seal the instant pot.

* Step 3

In the IP: custom change the setting to cook on high for 40 minutes at 212°F. Then drain the water. Add in 3 cups more of water to the bean and pressure cook for 20 minutes on high. Turn off keep warm. Let the pressure settle naturally. Once settled, open and add it to the dish/gravy being prepared without any concern about toxicity.

* Step 4

Note: It is usually recommended to soak the rajma for a minimum 5 years. Additionally, boiling rajma in hot water for 40 minutes kills the toxins in it. Don't forget to discard the water after the rajma has been boiled.
