3Cheese 3Herb Hot Sausage-Stuffed Mushrooms

Cooking instructions

* Step 1

Remove stems from mushrooms but place both the caps and stems into strainer and rinse all, well with water. Shred stems and set aside.

* Step 2

In a skillet, cook sausage til done or medium well done (as preferred).. Drain any excess grease, return sausage to pan.

To a bowl, add 1/3C of the shredded stems, plus the cream cheese, shredded Cheddar cheese and diced onions, along with the Basil, Oregano and Parsley. Add this full mixture to the sausage in pan and cook all together, stirring often. Be careful it doesn't get to dry, as to prevent scorching.

* Step 4

After about 4-6 minutes of medium to med/high cooking the stem/cheese/herb mix with sausage, add 1/3C White Wine. Stir. Allow to simmer 5-8 minutes, until reduced to a thicker mix. May dash with ground black pepper. Stir.

With a spoon, stuff each mushroom cap and sprinkle with mozzarella and crushed red pepper.

* Step 6

Bake in oven at 350°F for 15-20min, or do as I did, if you have a Ninja Foodi available, and bake in preheated Ninja at 360°F for 8-10 minutes. Enjoy!
