Lentils and Rice over Lettuce

Ingredient

Lentils

1 cup

Rice

1 large

Diced Onion

2 tbsp

Olive Oil

Cooking instructions

* Step 1

Wash and pick though lentils. Set aside.

* Step 2

Saute onion in olive oil until translucent. Add garlic and saute a few minutes more.

* Step 3

Add lentils, rice, chicken stock and seasonings. Bring to a boil, reduce heat, cover and cook 30 minutes, or until rice is done. Watch closely and stir to ensure food doesn't stick to bottom of pan.

* Step 4

Serve on a bed of mixed lettuces.
