Spiny Gourd Sabzi is a simple Vegetarian dish made by me for meals at home. Simple yet filling and comfort food for everyone by all means. It's quite a likeable one too.
The best part is that it goes well alongside Rice and Rotis both.
Made easily with a few simple pantry staples, it's a bliss.
It makes for a good Tiffin box idea too for the adults. Can be relished with Phulkas and Parathas too. Overall a perfect Lunchbox idea for everyone who doesn't like to have outside food and prefer simple homemade food.
A lovely looking Sabzi that's simple yet flavourful and filling. It is made with a few spices along with Tomatoes and Onions and is absolutely perfect for a family meal on any day. Not only with Rice, it tastes yummy with Rotis as well.
And since it's a semi dry one, it is good on it's own.

Cooking instructions
* Step 1
In a pan, heat some oil and add the cumin seeds along with the ginger garlic green chilli paste. Saute it for a few seconds. Now saute onions on a low heat adding all the powdered spices until done. Now add the chopped tomatoes and cook until soft and mushy. And then finally add in the spiny gourd slices.
* Step 2
Cover and cook on a low flame for 20 minutes. Do not over cook it. It should retain the crunch. It will be done easily. If desired cook it for a little longer duration if you prefer it to be too soft. Otherwise it is done in no time at all. Once the masala is cooked, the vegetable spiny gourd doesn't take much time at all. It is basically done quickly as it's too tender and juicy.
* Step 3
Garnish with chopped coriander leaves and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
* Step 4
It goes well alongside both rotis or steamed rice as well. It can be served with some pickle and papads or poppadums. It's a pure comfort meal for me. Enjoy!
