Sumac Okra Fry

The star ingredient being Sumac here which is well known to everyone as the Middle Eastern Herb. The colour itself speaks volumes about the dish. So sit back, relax and use it in your Curries and Gravies and even Stir Fried plus deep fried dishes to enhance the look as well as the flavour and the aroma too. In this particular Fried dish, I have used it in generous amounts for that amazing outcome. I served it at Breakfast but it can be used for any of the three basic meals of the day. You shall never regret using this lovely Herb. Try for yourselves and do leave me a feedback if possible. My family just loved it and so will yours. Mark my words people.

Cooking instructions

* Step 1

This is a simple recipe with equally simple pantry ingredients. Heat Oil and add Curry Leaves at first. Next add slit Green chillies and the rest of the spices excluding Salt. It should be added later on. Okra is sticky by nature. If Salt is added to it in the beginning, it will leave water due to which Okra gets sticky and becomes a bit difficult to cook. So never add Salt to it. Add it just a few minutes before taking it off the heat.

* Step 2

Now comes the magic ingredient which is the Middle Eastern Herb called Sumac. Add it according to your own preferences. You can add even more than that mentioned in the recipe as it will never compromise with the taste. Infact it enhances the flavour.

* Step 3

Keep stirring in between at regular intervals and cover it well. Keep the heat on a low only. It gets done within 20-25 minutes. And just before you decide to take it off the heat, add Salt according to taste and garnish with freshly chopped Coriander Leaves. Enjoy your warm family mealtimes with this super comfort food. You will definitely relish it's lovely aromatic flavours.
