#toc3 #cookpadindia This one is a simple everyday recipe for Breakfast by my mom. She always makes this for us and it's yummy with Rotis and Parathas. This dish is from my Maternal side and my grandmother used to make this very often for us and now my mom. And that is what iam also doing now. Trying to make it and keep this tradition alive but my kids just won't budge. They only eat the Omelette strips and leave the Eggplant. But hopefully they might love it as they grow older. It's my favourite for sure and I make this for myself whenever I can and have some time for myself. Very easy and with simple pantry staples, you can make it without much difficulty.

Cooking instructions

* Step 1

Heat Oil in a kadai. Saute onions with ginger garlic paste. Saute it on a low flame until lightly browned and done. Now add in the rest of the spices and Saute for a minute.

* Step 2

And add Brinjal or Eggplant pieces cut lengthwise or round whichever way you would prefer. That's perfectly okay. Mix well and add a little of water. Cover and cook until done on a low flame only. Also add Salt and Coriander along.

* Step 3

Make an Omelette as per your choice and cut it into long strips. Add these to the kadai. Mix and that's it. Serve it well garnished with a little more of chopped Coriander.

* Step 4

TIP- Use Salt in moderate amount. The dish has Salt in it and even the Omelette. So use it accordingly. Yum! Enjoy!
