It is not only yummy but also gorgeous in looks and healthy too. Enjoy this king of Fruits in an all-new fusion recipe by me. I have served it alongside some boiled Eggs but the serving suggestions can definitely vary. You can dish it out according to your family's liking and preferences. Easily done and absolutely perfect for any mealtimes. Be it a main course or a Brunch, it's simply delicious. You can use any variety of Mangoes in this except the raw ones. I have kept it much simple and aromatic without many loud spices or masalas just so that they do not over power the flavor and taste of the main ingredient which is our very own King of Fruits - The Mango. However, you can spice it up a bit if desired. But this tastes just lovely as it is. Enjoy Innovative Cooking with Zee!

Cooking instructions

* Step 1

Soak rice for at least 30 minutes. Meanwhile, bring the vegetable stock to a rolling boil with half of the salt as mentioned or if vegetable stock is unavailable, you can use one or two cubes of Maggi in about 6 cups of plain water. (2 cups of water for one cup of rice) or as required.

* Step 2

Cook rice al dente. Do not overcook. Take enough care about that. Drain and keep aside.

* Step 3

In a cooking pot, heat ghee and add the cumin seeds. Now add the whole spices along with chopped spring onions. Add the ginger and garlic paste too with the chopped green chilies. Saute them all for about 2-3 minutes. Now lastly add the chopped mangoes and saute until 2 to 3 minutes more just to make them aromatic. Also, add the rest of the powdered spices too.

* Step 4

Adjust salt according to taste. Now add the cooked rice into the pot and mix well. Cover and simmer for about 7 to 8 minutes. Garnish with loads of nuts, spring onion greens, and boiled eggs.

* Step 5

Serve hot with any raita of your preference. Or any curry or gravy also as per one's own choice and liking. Enjoy! Yum! Indulge!
