Sweet Flower Khaja (Achappam) with Rabadi (fusion)

A South Indian Sweet Flower Crispies combined with Delicious Rabadi to make an entirely new tasting delicacy.

Ingredient

Cooking time :

1 hour
1 cup

maida

1/3 -3/4 cup

powder sugar

1tsp

ghee

1/2 tsp

til

750 ml

milk

Cooking instructions

* Step 1

Sieve rice flour, maida and powder sugar.

Take in a bowl add in pinch of salt, elaichi powder, ghee. Adding milk in batches start mixing to get a smooth batter.

Mix well and set a pouring consistency. The batter should not be thick.It should thinly coat the back of a spoon.

Cover and rest for 10 minutes. Add in til and mix the batter vigorously for 1 minute.

Heat oil for frying. Place the achappam rod in the hot oil to get it heated on medium flame.

* Step 6

Now dip the heated rod in batter, taking care to dip to 3/4 level only. Do not cover the top side of the rod with batter.

Now carefully place the rod dipped in batter into the oil. Note do not touch the rod to the base of the oil kadhai. Hold for 1 minute.

Once slightly fried the khaja will leave the rod. Again dip the heated rod into the batter and fry. Turn carefully and fry crispy on medium flame.

Note not to dip the top surface of rod into the batter. Also while frying do not touch the suspension rod to the bade of the frying kadhai.

Take out on an absobent paper,cool and store khajas in airtight container. Serve with Malai Rabadi.

For Rabadi: Boil milk until thick after adding all the ingredients given above.

Cool Rabadi completely and chill in fridge. Garnish with badam pista.

Serve this fusion recipe in short glasses. It's a definite sureshot hit.

You can also prepare savoury version by making batter with rice flour, maida, salt pepper powder, ajwain, haldi, chilli flakes, til and 1 tsp oil.
