Chestnut stuffed onion cups 🌰 #christmas #vegetarian
I love these #alternative #christmas #starters or perfect as a stuffing side for anyone who doesn't want traditional pork stuffing. A lovely addition to our Christmas feast this year. 🎄🎄
Cooking instructions
* Step 1
Top and tail four large onions and peel of the skin. Slice in half along the middle so they sit flat with rings exposed.
* Step 2
Pop out the inner most rings, leaving about 3 rings to act as a outer shell cup and set aside on a baking tray. (As pictured). And lightly brush with oil.
Dice all the onion you got from the centres of each onion and fry on a low heat in a pan with a little oil. Add your crushed garlic and chilli flakes.
* Step 3
As the diced onion, garlic and chilli is lightly frying, dice your cooked chestnuts and add to the pan. Stir them in mushing them abit.
* Step 4
Once the chestnuts have warmed through add your dried thyme. I prefer dried sprigs of thyme but you can used store bought thyme.
* Step 5
Stir in your breadcrumbs to the mixture and remove from the heat.
* Step 6
Spoon your onion and chestnut mixture into each onion cup.
* Step 7
Bake at 180C for 25 minutes.
* Step 8
Serve as a starter with gravy or as a side to your toast dinner.
* Step 9
(optional) if using bacon in this recipe. Finely dice and pan fry bacon beforehand to make lardons and add to your mixture before stuffing your cups.
