Cooking instructions
* Step 1
Peel, Wash and chop pumpkin in small pieces.
* Step 2
Put it in a pressure cooker with 2 tb sp water and give 2-3 whistles.
* Step 3
Peel, Wash and chop onion and grate tomatoes and ginger.
* Step 4
Heat oil in a wok. Add cumin seeds and fenugreek seeds and when cumin seeds splutter add onion Tomato and ginger and saute till oil leaves the sides on low flame. Now add salt, red chilli powder, turmeric powder, garam masala and mix well.
* Step 5
Open the pressure cooker and mash pumpkin with ladle for 2-3 minutes. Add sugar and mango powder in it and mix well.
* Step 6
Add this mashed pumpkin in onion Tomato paste and cook for 2-3 minutes
* Step 7
Serve hot garnished with chopped coriander leaves with parantha or puri.
