Risotto gamberi e caviale prawn and caviar risotto ๐ŸŽ„

A seriously tasty and impressive risotto. I used lump roe fish eggs, but it would work with any kind. Christmas Eve 'La vigilia di Natale' is a big family celebration. Ingredient

Food ration :

150 g

prawns

1-1.2 litres

hot stock

to taste

Salt

Knob

butter

Cooking instructions

* Step 1

Fry onions gently in olive oil. When softened, add the rice and cook for about 2 mins. Then add wine and let it evaporate. Add about 3/4 of the stock and gently bring to the boil. Simmer for about 10 mins stirring frequently. Add more stock as needed

* Step 2

After these 10 minutes, add the prawns. Cook for another 8-10 mins. Towards the end of cooking time add a knob of butter and more stock or water if needed, check for salt. This will make it creamy. Add the caviar and mix well
