Ingredient

Cooking instructions

* Step 1

Wash, chop and remove seeds. Slice into thin chips. Place in a strainer over a bowl. Sprinkle with salt

* Step 2

Place a plate on top and a weight on top of that. Leave for 1-2 hours. This drains the natural water from them otherwise they go soggy. Give a quick rinse under the tap, dry well using kitchen paper. Heat a good amount of oil in a deep pan or wok

* Step 3

Lightly coat the courgettes in flour

Drain off excess flour and fry until golden brown. Drain on kitchen paper. Best to do this in 2-3 batches

Serve with dip or sauce of your choice or just with a squeeze of lemon :)
