Vegetable and beef soup
Cooking instructions
* Step 1
Bring stock to the boil. Add finely chopped leek and carrots. Simmer for 10-15 mins then add finely chopped potatoes. Simmer for another 20-30 mins
* Step 2
Brown off the mince, drain any fat and set aside
* Step 3
Using a hand blender, blitz the soup up a bit, not too much, leave some chunks. Add mince and simmer for another 10 mins. Add salt and pepper. Enjoy with crusty bread :)
