Bengali cuisine is so unique and different with vegetables that I chose to share this week only Bengali cuisine with wintry vegetables. Today it’s Phulkopi’r Dalna. Phulkopi’r Dalna has no authentic recipe but depending on the vegetables used it’s very flavourful and has a distinctive aroma and texture. Let’s dig!!

Preparation time-10 mins, Cooking time-20 mins
Cooking instructions
* Step 1
Wash the cauliflower and cut the florets, wash the potatoes, peel and cut into roundels. In a pan heat mustard oil and add the cauliflower, potatoes and fry golden colour, set aside
* Step 2
In a bowl add ginger paste, add red chilli powder, turmeric powder, coriander powder and mix with 2 Tbsp water
* Step 3
In the same wok to the same oil add the paste. Cook on low flame until oil surfaces, add salt and sugar now and mix well
* Step 4
Add the fried cauliflower, potatoes and peas and slit green chilli. Add 2 cups water and mix well. Cook covered on medium flame
* Step 5
The consistency should be dry
* Step 6
In a separate wok heat ghee, add dry red chilli, bay leaf and cumin seeds and stir and add to the Cauliflower Dalna
* Step 7
Serve with steamed rice and Moong Dal, enjoy 😊
