Shahi Mango Dahi Vada

Dahi Vada is a favourite Indian appetiser to most and variations are immense. I chose to make it different with mangoes

Cooking instructions
* Step 1
Soak Urad Dal and Moong Dal for 4-5 hrs, drain and add to a blender, add chopped ginger and green chilies and adding little water make a coarse paste. Set aside
* Step 2
Add salt and whisk very well so that one gets fluffy vada’s.
* Step 3
In a wok heat oil and pour a ladle of the batter to make the vadas. On medium flame once fried, flip sides and fry golden, set aside. Finish the batches
* Step 4
In a big bowl add warm water, red chilli powder, tamarind chutney, salt and add the Vadas and soak for 30 mins. Squeeze out the water and set aside
* Step 5
In a bowl add mango pulp, yogurt and beat well, add milk to make a liquid consistency
* Step 6
Assembling - On a plate place the vadas, pour the mango yoghurt mix, add coriander chutney and tamarind chutney, drizzle the Chaat Masala mix, add pomegranate seeds and let it set
