* I love these muffins, but have never made them myself ... I looked at the amount of ingredients and decided to cut the recipe in half! I didn’t have buttermilk so I searched substitutes that I could use. I make my own kefir ... so I substituted plain kefir for the buttermilk.
Cooking instructions
* Step 1
Pour boiling. water over (1st) bran and let soak a few minutes
* Step 2
Cream butter and sugar. Add in eggs and buttermilk. Mix in dry ingredients and bran from step one.
* Step 3
Lightly stir in All Bran until just mixed.
* Step 4
Pour into greased muffin tins and bake at 400 degrees for 20 minutes.
* Step 5
*** I used a little less than 1/4 c batter for each muffin and only baked for 9.5 min. Yield: 36 muffins
