Quick & Lean Pea & Minced  Meat Stew

A hearty, healthy and fast (<30 min) recipe that is great for batch cooking. The recipe is made healthy by using lean meat and only adding a bit of olive oil at the end ,so it doesn't saturate with heat. Because the meat is lean, much of the flavour favour comes from herbs and sweetness of carrots. It's a quick cook on the stove, so if you are making a "busy mum" dinner or lunch you can chop/grate everything the day before and just combine to have a full meal in 20-30 minutes. Great autumn and winter comfort food as well :)

Cooking instructions

* Step 1

Finley chop the onion or put it in food processor. I like keeping some texture of onion once cooked, but not a lot, so I prefer to chop it finely.

Grate potato and carrot. Finely grated will cook faster - carrot will show up as orange specs and potato will dissolve once cooked. more coarsely grated will show up more in a cooked dish.

Take medium to large pot, and add water (about 1 finger depth) and then add chopped onion. Cook the onion until it softens and starts to look somewhat yellowish and transclucent.

Add minced meat, salt and and pepper and saute until meet is cooked (but not overcooked).

Add green peas. Add water to cover just to cover green peas so that it can cook, not more. Add herbs and veggie stock cube i(f you are using it.). NOTE: If you are using fresh herbs, you can also chose to add them just before the dish is done to preserve their goodness.

Once peas are soft, add carrots and cook until carrots soften. Add grated potato. You may need to add a bit of water - again, just so the contents are covered in water but not more. Let simmer or low-medium heat until cooked and soft, about 10-15 minutes.

* Step 7

Once done and you turn off the heat. Taste and adjust herbs, salt and pepper to taste.

Add olive oil. This is done so that oil doesn't saturate and you get full health benefits of it.

Garnish with chopped herbs (optional). Serve hot /warm. It makes great left overs, and it can be frozen.
