Roasted Zucchini and Yellow Squash

Roasted Zucchini and Yellow Squash

Cooking instructions

* Step 1

Preheat Oven to 400°

* Step 2

In a Large Mixing Bowl, add Sliced Zucchini, Sliced Squash, Minced Garlic, Onions, Thyme, Lemon Zest, Olive Oil, Salt, Black Pepper, & Red Pepper Flakes. Mix Well. Taste for Seasoning.

* Step 3

Pour mixture into a Large Casserole Dish or Baking Sheet and Spread out into 1 Layer. Roast for 25 - 30 Minutes. Stir Zucchini and Squash well, and Flatten back out. Cut Butter (if using) into several Slices and Scatter them evenly Over Top. Roast for another 10 - 15 Minutes.

* Step 4

If the Zucchini and Squash is Done to Your Liking, Sprinkle Parm (if using) evenly over the Top now. Roast until Cheese is Melted. If you like your Veg more Softened or Well Done, continue to Roast, Check, and Stir around every 10 - 15 Minutes, until it's as You Prefer. Just remember to Add the Parm around 10 Minutes before End of Cooking.

* Step 5

I love mine when it starts to Shrink Down, Fall Apart and Caramelize around the Sides, so I tend to Cook mine for a Long Time. But, it's Delicious at any Stage, so you Can't really Go Wrong. Enjoy!
