Mom’s Manicotti

Cooking instructions

* Step 1

Preheat oven to 350 degrees

* Step 2

In a large bowl mix cheeses (only 1/2 parm cheese), chopped up spinach, eggs, salt & pepper until well blended

* Step 3

Place mixed stuffing into plastic bag & cut the corner to make for piping stuffing into your manicotti noodles. Squeeze filling into each noodle & place them at the bottom of your baking dish. I used a 9x13 dish.

* Step 4

Cover the pasta completely with marinara sauce. Sprinkle the other 1/2 parm cheese on top & extra mozzarella if you would like it cheesier. Cover with tin foil & place in oven for an hour.

* Step 5

Remove dish from oven after the hour. Uncover & bake an additional 10 mins. Serve with garlic bread if you like & enjoy!
