Red Bean Popsicles - Japanese Azuki Bar
My red bean popsicle recipe is inspired by the brand Imuraya's azuki bar. With only 4 ingredients plus water, this popsicle recipe is easy to make and perfect for enjoying during the hot summer weather. For a full instruction video, please visit my Youtube channel: https://youtu.be/bAxY46Us06A
Cooking instructions
* Step 2
Add the red beans and 5 cups of water to a pot. Turn on the heat and bring the pot to a boil.
* Step 3
When the water starts to boil, cover the pot with a lid and reduce the heat to low. Cook for an hour or until the liquid reduces to about 2-1/2 to 3 cups. After the first 5 minutes, you want to check the pot and scoop out the floating red beans. These floating beans are of bad quality and we don’t want them in our popsicles.
* Step 4
After 1 hour, check the beans to see if they are soft or not. If not, continue to cook until the red beans are soft and the liquid is reduced. The size of the azuki beans will cook differently so it is possible that you may need to cook slightly longer. If the liquid is too low, add some water.
* Step 5
Add 1 cup of sugar to the pot. Feel free to add more or less depending on how sweet you want your popsicles to be.
* Step 6
Mix 4 tablespoons of corn starch with 4 tablespoons of water. Then pour it into the pot and mix well.
* Step 7
Add salt. Mix well to make sure everything is all dissolved.
* Step 8
Bring the pot to a boil again then turn off the heat.
* Step 9
Let the red bean liquid cool down before transferring into the mold. Freeze the popsicles in the freezer until they are completely solidified.
* Step 10
To serve, run the frozen popsicles under cold running tap water so it’s easier to remove from the mold.
