Aunty Eiko’s Coconut Cherry Cake

This is my favorite original cake. Cake dough mixture with 1 pack of coconut milk powder makes so nice flavor.

Ingredient

Food ration :

2 cakes
180 g

flour

2 teaspoon

baking powder

100 ml

maple syrup

Whip egg white with hand mixer.

Mix well room-temperature butter and sugar. After mixing well combine egg york one at a time. Put coconut powder here.

Using spatula, mix whipped egg white and flour- almond powder- baking powder- mixture one after the another.

If you like please put coconut fine 30g here.

Put dark cherry inside and top of dough.

Bake in reheated 180℃ oven for 50 minuets ~1 hour

Pour 50ml maple syrup over each just- baked cake.

Wrap with film and stay for a day. It makes so moist.
