Broccoli Manchurian

Broccoli Manchurian

#protein Plant based protein need not be bland or tasteless. You can easily recreate a flavourful recipe by substituting them as the main ingredient

Ingredient

Salt

1/2 cup

water

1/2 tablespoon

crushed black pepper

1 tablespoon

soya sauce

1 teaspoon

vinegar

2 tablespoon

tomato ketchup

1 tablespoon

chilli sauce

1 tablespoon

ginger garlic paste

For frying

Oil

Cooking instructions

* Step 1

In a bowl combine flour, corn flour, ginger garlic paste, salt as needed and enough water to make a thick batter

* Step 2

Whisk well to weed out lumps

* Step 3

Heat oil for deep frying

* Step 4

Drop in hand full of broccoli florets into the batter and coat them well with it

* Step 5

Once the oil is hot enough drop them carefully into the oil and deep fry in Low heat until crisp

Rest the fried florets on an absorbent paper for sometime

Repeat the same steps till you finish frying all the broccoli florets

* Step 8

For the gravy, leave 2 tablespoon oil in the wok and separate the rest

* Step 9

Add the garlic and sauté until aromat using Low heat (do not brown them)

* Step 10

Add the chillies,onions and capsicum and sauté for 2-3 minutes

* Step 11

Add the sauces one by one and the vinegar

* Step 12

Mix well and add 1/2 cup of water

* Step 13

Let simmer for a minute

* Step 14

Meanwhile make a slurry combining 2 tablespoon cornflour and required amount of water

* Step 15

Once done, add the slurry into the wok and stir continuously till the gravy thickens

* Step 16

Add salt to taste and mix well

* Step 17

Add the fried broccoli now and coat well with the gravy

* Step 18

Cook covered for 2 minutes for the broccoli to absorb the flavours

* Step 19

Take off heat then and transfer to a serving bowl

* Step 20

Garnish with chopped spring onion greens

* Step 21

Enjoy with fried rice or noodles

* Step 22

My tip: if you would like this recipe as an appetiser, add in less water while making the gravy
