Nan khatai (Indian shortbread)
Nothing like the smell of freshly baked Nan Khatai! Nan Khatai are the Indian version of shortbread biscuits. They are made with simple ingredients...flour, semolina ( crunchiness) sugar and butter and tastes delicious!

Cooking instructions
* Step 1
Pre-heat the oven to 375 F degrees.
* Step 2
In a mixing bowl add flour, semolina and and salt and mix till well combined.
* Step 3
In another bowl mix ghee and sugar together till it’s fluffy (I used Kitchen aid mixer)
* Step 4
Add the flour mix (No.1 ingredients) and mix until it become a soft and smooth. Can add a tbspn of milk to make it smoother!
* Step 5
Wrap the dough and rest it for 30 minutes.
* Step 6
After 30 mins, take a dough and make into a ball(in a small marble size). Then flatten the ball slightly with a palm of your hand. Make a shallow hole and add Jam.
* Step 7
Lined the baking tray with grease proof paper and place the flatten shortbread on there. Put in the oven for 25mins or until the bottom turns slightly brown/ golden coulour.
* Step 8
Remove nankhatai from oven and let it cool completely.
