Dates and nuts roll / Khajur burfi

Cooking instructions
* Step 1
Blend the dates for about 2 mins without adding any water. Do not over blend (Slightly coarse texture)
* Step 2
Dry roast the poppy seeds over low heat just for 1-2 minutes or until it's rawness goes away and becomes slightly golden brown in colour. Keep it aside. Now roughly chop the mixed nuts and fry them very lightly in a tablespoon of ghee. Make sure it shouldn't get burned. And keep it aside.
* Step 3
In the same pan, add in remaining ghee. Once heated, add in the crushed dates into it. Cook it over medium heat. Keep cooking for 2-3 minutes.
* Step 4
When the mixture becomes tender, add in the chopped nuts to it. Mix it thoroughly for a while until the nuts are completely combined with the dates.
* Step 5
Now add in Cardamom powder, a tsp of earlier roasted poppy seeds. Keep mixing it for a while and don't overcook the mixture. When everything has combined well or it looks like a dough like consistency, switch off the flame and transfer it to a flat plate/ surface.
* Step 6
Let the mixture cool down a bit, but don't let it come down to room temperature completely, otherwise it will be difficult to work with,as it will become firm after becoming cooled.
* Step 7
Now form a log out of the dough like dates mixture with the help of your hands.
* Step 8
Sprinkle some poppy seeds, and chopped pistachios on your kitchen platform or on any plain surface. Now gently roll the dates mixture log over it. The poppy seeds and pistachios sticks to the log and gives a royal look to your dates roll / burfi.
* Step 9
Now wrap your dates log tightly with aluminium foil and keep it in a refrigerator for 2-3 hours.
* Step 10
Once it's set,cut it to your desired shape and size. Remove the foil paper once your done with cutting shapes.
* Step 11
Store it in any airtight container for up to 2-3 weeks.
