Healthy Vegetable Soup for Weight Loss
Cooking instructions
* Step 1
Wash and finely chop all the vegetables and set it aside. Chop finely the ginger, garlic and green chilli and set it aside.
* Step 2
To make a slurry, in a small bowl, add arrowroot powder/cornflour and water and mix it well. It should be lump free. Set it aside.
* Step 3
Heat oil in a large kadai. Add the finely chopped garlic cloves and saute on low flame till light golden brown in color.
* Step 4
Next add the finely chopped ginger and green chilli and saute it for a minute.
* Step 5
Add in the fresh green peas and saute for 30 seconds. Then add all the finely chopped vegetables and saute it on high flame for a minute.
* Step 6
Add salt and give it a good mix.
* Step 7
Add water and mix it well. Allow it to come to a boil.
* Step 8
Add black pepper powder and mix it well. Reduce the flame to low and cover and cook for 5-7 minutes.
* Step 9
Now stir the arrowroot slurry well and then add it to the soup and mix it well. Arrowroot can be added as per desired thickness. Add some chopped red, yellow and green bell peppers for a crunch. Add a dash of black pepper powder and mix it well.
* Step 10
Off the flame and add the chopped coriander leaves and apple cider vinegar and mix it well. Check for the seasonings.
* Step 11
Healthy and Tasty Vegetable Soup is ready. Serve it hot.
