Italian Marinara Sauce

Marinara is an Italian tomato based sauce and consists of fresh or canned ripe tomatoes,onions,garlic and mixed herbs.Homemade Marinara Sauce tastes unique with the right combination of chilli flakes,basil leaves,olive oil and little sugar to balance the tartness of tomatoes.This sauce originated in Italy and is used in many Italian -American dishes ranging from pastas,spaghetti,as a topping for pizza ,even used in sandwiches or as a dip with French fries,crackers and many more.Here fresh tomatoes are used which needs blanching,peeling,crushing and simmering to the right consistency.

Cooking instructions
* Step 1
Boil water in a pan with 1/2 tsp salt.Remove eyes from tomatoes and make cross cuts on the top.Add them to the boiling water and blanch few minutes.Immediately immerse them in ice cold water.Peel the outer skin,dice and mash coarsely.
* Step 2
Heat oil in a skillet.Fry minced garlic and finely chopped onion.Saute few minutes till light brown.Add sugar, chilli flakes,black pepper powder,mixed herbs. Toss and add the crushed tomatoes, 1 tbsp tomato puree,salt to taste,and simmer in low flame till the sauce gets a thick consistency.
* Step 3
The tomatoes can be blended with a hand blender to get a smooth and silky finish or left as it is to get a little coarse and dense sauce.Both ways they taste delicious.Sprinkle chopped fresh basil leaves and toss.Finally add a spoonful of oil and garnish with fresh basil leaves.Cool and store in a bottle and refrigerate.Use as and when required.Keeps well for a month.
