Crispy Veg Envelope or Patties without Oven

#holi21 Crispy Veg Envelope or Patties is an easy snack which can be enjoyed in breakfast or evening with a cup of tea.It can also be served as an appetizer at parties or can also be packed in kid's tiffin box.Normally these puff patties are baked, but when in hurry,they can also be deep fried and tastes equally delicious.Serve them hot with tomato ketchup.

Cooking instructions

* Step 1

Boil potatoes and grate or mash them.Add roasted cumin,coriander and fennel powder,turmeric,red chilli powder,ginger paste,garam masala powder,chaat masala and salt to taste. Heat 1 tbsp oil in a pan.Sprinkle cumin and fennel seeds.When they crackle,add chopped onion and fry lightly.

* Step 2

Add the mashed potato alongwith the masalas.Add boiled green peas, few roasted peanuts,chopped green chillies and chopped coriander and fry till well mixed.Set aside.

Add oil,salt to taste,baking powder in maida and sift well.Add water and knead into a tight dough.Cover and let it rest for 10 minutes.Divide dough into 5 or 6 balls and roll into thin chapatis.Make a slurry of cornflour and ghee and brush on each rolled sheets.Place each sheet on top of another.Roll into a tight cylindrical roll and cut into 5 to 6 pieces.

* Step 4

With the pressure of palm flatten each ball and roll out into thin sheets like roti. Place a portion of potato mixture in the centre of the sheet and smear water in the edges.Fold into desired shape either rectangular or triangular.

* Step 5

Refrigerate at least for an hour. Heat oil in a pan and fry potato peas stuffed patties in low flame till crispy and golden brown. Serve hot with tomato ketchup as an appetizer or as a snack with evening tea.
