Cooking instructions

* Step 1

Bake the potatoes in the microwave for about 7 minutes or in the oven at 180 oC for 1 hour Slice the potatoes in half and scoop out the fluffy potato into a bowl and mash

* Step 2

Saute the onion, bacon and garlic in a shallow pan over a medium heat for 5 minutes Stir the bacon mix into the mashed potatoes Add in half the cheese and season with salt and pepper

* Step 3

Place the potato skins onto a tray and fill with the mashed potato mix Top with the rest of the cheese

* Step 4

Bake at 180 oC for 15-20 minutes Top with the mayo, parsley and chilli flakes

Ingredient

3 tablespoons

dairy free milk

1 tablespoon

diced chorizo

2 tablespoons

dairy free cheese

Cooking instructions

* Step 1

Whisk the eggs, dairy free milk and seasoning together Add the chorizo and tomatoes into a small pan with a drizzle of oil and sauté for 5 minutes Remove a third of the mix and set aside Add in the spinach and cook for a minute then set aside

* Step 2

Place a drizzle of olive oil in a large shallow pan over a medium heat Also heat the grill to medium Pour the egg mixture into the pan and cook for a couple of minutes Place the omelette under the grill until the top is lightly brown

* Step 3

Remove from the grill and place the spinach mix down the middle of the omelette Top with half the dairy free cheese and fold both sides over so the omelette is closed Top with the chorizo and tomatoes you set aside earlier and the rest of the dairy free cheese

* Step 4

Put back under the grill for another couple of minutes Serve topped with the torn basil

mayonnaise

1 tbsp

lemon juice

Cooking instructions

* Step 1

Preheat the oven to 200 oC Mix together the mayonnais, lemon juice, chilli flakes, tuna, onion and peppers Season to taste

* Step 2

Divide between 2 slices of gluten free bread Top with the dairy free cheese and the remaining 2 slices of bread

* Step 3

Cut in half and place on a baking sheet Bake in the oven for 8 minutes or until the bread is golden and the cheese melted

* Step 1

Preheat the oven to 180 oC

* Step 2

Add a drizzle of olive oil to shallow pan over a medium heat Saute the bacon, onion, garlic, onion and peppers for 5 minute

* Step 3

Whisk the eggs in a large bowl Stir in the bacon mixture, spinach, tomatoes, cheese and seasoning

* Step 4

Grease a casserole dish Pour in the gg mixture

* Step 5

Bake for 30 minutes Allow to cool slightly before slicing and serving

* Step 1

Cook the pasta per the instructions on the packet Place the pancetta, onion and garlic in a shallow pan over a medium heat Saute for 5 minutes or until golden

* Step 2

Pour in the chicken stock and simmer for 5 minutes Whisk the egss, parsley and cheese together Add the cooked pasta and egg mix into the pan and stir until well combined

* Step 3

Cook for a couple of minutes Serve with some extra parsley and dairy free cheese
