Grilled Zucchini

Cooking instructions
* Step 1
Mix feta, mint, oil, lemon juice, lemon zest and scallions; set aside.
* Step 2
Slice each zucchini into about 8 or 10 half moons.
* Step 3
Place zucchini on a baking sheet (or other flat surface) in a single layer; coat both sides with cooking spray and sprinkle with salt.
* Step 4
Heat grill on high. Cook zucchini about 3-4 minutes on each side, flipping once
* Step 5
Top zucchini with feta mixture
