Glazed strawberry custard tart 🍓

Now the weather is getting cooler in UK and the season of strawberries will be ending soon. Before that, I wanted to enjoy as many ways as possible! This time, I used strawberries from Cheddar, UK, which I love the most!

Ingredient

Food ration :

Tart tin 20cm diameter with removable bottom

Cooking instructions

* Step 1

【1.Prepare tart dough】Grease the tin with butter and lightly dust with flour.

* Step 2

After the butter has softened to room temperature, mix the butter and sugar together with using a spatula. Once it's mixed well, add the egg yolk and mix again.

Add the sieved flour and mix well with a spatula to make one batch. Cover with cling film and place in the fridge for 1 hour.

* Step 4

【2.Prepare custard】Mix the egg yolks and sugar in a bowl using a whisk until the mixture becomes whitish, then sieve the flour into it and mix again until it becomes smooth. (Do not add butter yet)

Heat the milk in a saucepan over low heat. Pour the warm milk little by little into the bowl(which we just mixed sugar, yolks and flour) and stir. Put this back into the pan, strain it into a colander.

Put the mixture on low heat again and stir with a spatula from the bottom. Add a drop of vanilla essence. Stir until the mixture is well thickened and combined. Stop the heat, add butter at the end and mix. Set aside after placing it in a tray. If it is to be left for a longer period, keep in the refrigerator.

【3.Bake the tart pastry】When you take out the dough from the refrigerator, make sure to start pre-heating your oven to 180℃. Place a parchment paper on the dough, roll it with a rolling pin and attach it to the tart tin.

Once the dough are perfectly fitted, use a fork to poke lots of holes. Cover the edge part with an alminum foil. Place tart stones on top if you have one (I didn't have them, so I placed some rice on after applying a parchment paper. This rice can be eaten later!).

Bake at 180°C for 15 minutes. After 15 mins, I removed the aluminum foil, parchment paper and rice to bake for another 10 mins. The length of baking depends on the oven, so please adjust accordingly.

【4.Decoration】Once the tart is perfectly cooled down, apply the custard. If the custard is too hard, you can re-heat in a pan and add a bit of milk before pouring into the tart. Cut strawberries into half size and arrange as the photos shown below.

【5.Glazing】Add powder gelatin, sugar and water into a heat resistant container and heat in the microwave for 30 seconds. Mix well and use a baking brush to apply on the tart to shine the surface of strawberries!
