Congee

I love congee, and I just recently started making this at home. Easy to make comfort food! People usually make congee with long grain rice, but we have koshi-hikari Japanese rice at home, which came out perfect.

Cooking instructions

* Step 1

Heat 1 tbsp oil in a big non-stick pot.

* Step 2

I just used leftover cooked rice for this dish. Briefly sauté cooked rice in oil, medium heat.

* Step 3

Add 9 cups of beef or pork broth to the pot. Stir often. When bubbles start forming, reduce heat.

* Step 4

Add 1 tbsp ginger and kosher salt to taste. If congee consistency becomes too thick, add more broth or water.

* Step 5

Serve with sliced century egg or hard-boiled egg. Add soy sauce and calamansi according to personal preference.
