Cooking instructions
* Step 1
Roast eggplant & soak in water for 5 minutes.
Remove skin & with fork mash it.
* Step 2
Heat oil in a pan add jeera.
Add finely chopped onion & cook till they are transparent.
* Step 3
Add ginger garlic paste & chopped tomatoes.
Cook till tomatoes are soft. Add green peas.
* Step 4
Add green chilli, salt, red chilli, garam masala & cook for 5 minutes.
Add mashed eggplant. Mix well & on slow flame cook for 10 minutes covered with lid.
In between keep stirring.
* Step 5
Last add fresh coriander leaves. Serve with hot roti.
