Pasta Black Bean Salad

Cooking instructions

* Step 1

Cook pasta according to the Al Dente The pasta should be cooked and still have firmness. Strain and place in Ice water to cover. This will stop the cooking. Mix everything except the pasta in a large bowl, I do not thaw the frozen broccoli and carrots. Pour the dressing, over the salad mixture. Stir gently to blend, drain the pasta again, add to the mixture, stir gently to prevent smashing or tearing the Pasta. Cover with a lid or Saran Wrap and allow to Chill at least 2 hours. Always stir before serving. The dressing settles to the bottom. Sometimes I have used a second bottle because the pasta absorbed the dressing. No it did not get mushy. Sometimes I add frozen peas, corn etc, This is my favorite way of maki g this salad.
