One Pot 30 minute Chicken & Rice
As most of my meals have been going lately, I didn't have a clue what I was going to make for dinner, but needed to whip up something quickly. This seriously only took me 30 minutes from the time I started cutting the chicken 'til it was done cooking, and I only used one lil ol' skillet. Came out really tasty too. Win, win, win! Lol
Cooking instructions
* Step 1
Cut chicken into 1" cubes. Sprinkle with chicken & poultry rub and celery seed. Toss to coat evenly.
* Step 2
Heat a large deep sided skillet over medium high heat. Add olive oil. As soon as it's hot (only about 20 seconds) add chicken. Cook about 5 minutes, stirring occasionally to brown on all sides.
* Step 3
Add peas, carrots, chicken broth, and soup. Stir to blend soup into broth. Bring to a simmer for 5 minutes.
* Step 4
Add rice. Stir to fully incorporate. Turn off heat. Cover. Let sit untouched 10 minutes. Stir before serving. Enjoy!
