Malai kofta

#India Koftas are generally fried balls made of meat or vegetables or paneer. Though traditional koftas are made of minced meat but in India vegetarian Koftas are as popular as non veg Koftas & the most popular one is malai kofta which is made of cottage cheese. This is the most saught after dish in restaurants & also prepared during weddings & get together. Malai Koftas are fried crisp outside melt in mouth kofta which made of cottage cheese & potatoes & these are dipped into a rich creamy spicy tomato gravy.

Ingredient

all purpose flour

1 tablespoon

Ginger-garlic powder

1/2 teaspoon

grated ginger

1 teaspoon

turmeric powder

1 teaspoon

red chilli powder

1 teaspoon

corriandar powder

1/2 teaspoon

cumin powder

2-3

cloves

1/2 teaspoon

sahi garam masala

1 teaspoon

kasoori methi

2 cups

oil

2 teaspoon

salt

2 teaspoon

sugar

Cooking instructions

* Step 1

1st mix cottage cheese,boiled mashed potatoes, coriander leaves,all purpose flour,salt,garam masala powder, 2 tablespoon powdered milk & finely grated ginger together & make medium sized balls out of it.

Then heat oil in a pan & deep fry the kofta balls until golden brown & keep aside.

Now In a saucepan add some water and into the water add diced whole onion, tomatoes & cashews & boil until the onion becomes translucent.

Cool down the mixture a bit & make a smooth paste out of it.

* Step 5

Now in another pan heat up some oil & add whole spices (bay leaf, green cardamoms,black cardamom & clove, peppercorns) & wait untill the aroma comes out from the spices then add 2 green chillies.

Now in that oil add a water mixture of Ginger-garlic paste + cumin powder+ coriander powder + red chilli powder + turmeric powder.Then stir & mix well the spice mixture until the oil separates from it

Once the spice mixture is done add the tomato-onion paste & incorporate everything together. Then add the salt & sugar & cover the pan & simmer for 10 minutes.

After that if the gravy is too thick add some lukewarm water to it then add heavy cream or full fat milk & simmer for 5 more minutes.

Finally add sahi garam masala & crushed kasuri methi to it & turn off the flame.

Arrange fried Koftas in a serving platter & pour the gravy slowly onto the Koftas. Garnish it with chopped coriander leaves & serve hot with rice or rotis.
