Tandalachi Ukad is basically a rice flour porridge cooked using slightly sour curds. This is a traditional breakfast dish from Maharashtra, especially the Konkan region and can be cooked in a jiffy with the minimum of ingredients required.
Konkan being a coastal region has rice as it's staple diet and we can find quite a lot of healthy, yet simple and delicious rice dishes in this region. This ukad is good for kids too where you can opt to make it less spicy to suit their palates.

Cooking instructions
* Step 1
To make Tandalachi Ukad, first beat the curds well in a mixing bowl and add the rice flour to it.
* Step 2
Mix and add water, a little at a time. Beat well to remove lumps if any.
* Step 3
Heat a pan and add oil to it. When it heats up, add the mustard seeds.
* Step 4
As soon as they splutter, add the cumin seeds, asafoetida, green chilli, curry leaves, garlic, ginger and turmeric powder. Saute for just a few seconds.
* Step 5
Add to it, water and sugar and bring it to a boil. Keeping the flame high, add the rice flour mixture and keep stirring till it reaches a boil. This will prevent the curds from splitting.
* Step 6
Reduce the heat to low and add the salt. Mix well and cover and cook further for about 6-7 minutes, stirring occasionally
* Step 7
When it gets cooked, the mixture will leave sides and start coming together. Add some ghee and coriander leaves and mix well.
* Step 8
Serve this delicious and nutritious Tandalachi Ukad for breakfast garnished with some fresh coriander leaves and a dollop of ghee on top.
