Delicious Breakfast Egg Bake

I like to make this the night before while my toddler is asleep. Just pop it in the microwave in the morning & you have a delicious breakfast.

Ingredient

30 mins
3 tbsp

Butter

3 tbsp

Milk

Cooking instructions

* Step 1

Finely chop potatoes & green pepper.

Add potatoes, green pepper & butter to a 2 quart glass square dish.

* Step 3

Microwave covered on high for 8 minutes ensuring vegetables are tender.

* Step 4

Meanwhile, beat eggs, milk and pepper,

Stir in mushrooms & ham.

Add to vegetables and stir.

* Step 7

Cover & cook at 70% for 10 minutes stirring every 2 minutes.

Sprinkle with cheese & cook for 2 minutes on high or until cheese is melted.

Let cool 5 minutes and enjoy!
