Greek Lamb Chops

Cooking instructions

* Step 1

Add all the ingredients expect the lamb into a jug and mix.

* Step 2

Using kitchen roll pat dry the lamb chops and place them on a tray or plate.

* Step 3

Pour the marinade over the lamb and rub it all over the meat. Wrap it with clingfilm and place in the fridge over night for maximum flavour.

* Step 4

Remove lamb chops from the fridge an hour before so they are room temperature for cooking.

* Step 5

Heat a cast iron over high heat with olive oil and once it starts to smoke add the lamb. Cook on each side for 3-4 minutes.

* Step 6

Let it rest for 5 minutes before serving.
